Red Velvet Cake Recipe By Belly Amy's & More

Red Velvet cakes originated in the American-African nation in the early 19th century to commemorate the struggle and freedom of the community. Belly Amy's Recipe for Red Velvet Cake

Ingredients: Ensure before you start that you have a good weight measuring unit as the key to a good cake is keeping the basics close to you. We caution that even a gram here and there and the heating temperature of the oven may either do wonders or spoil the entire cook. 

For the Cake:

  • 2 ½ cups (250g) cake flour
  • 1 ½ cups (300g) granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cocoa powder
  • 1 ½ cups (360ml) vegetable oil
  • 1 cup (240ml) buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tbsp red food colouring
  • 1 tsp vanilla extract
  • 1 tsp white vinegar

For the Cream Cheese Frosting:

  • 8 oz (225g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 4 cups (500g) powdered sugar
  • 1 tsp vanilla extract

Instructions

For the Cake:

  1. Preheat Oven and Prepare Pans(Look to have only Approved Home Ovens if you are cooking at home)
  2. Preheat your oven to 350°F (175°C).
  3. Grease and flour two 9-inch round cake pans or line them with parchment paper.

Mix Dry Ingredients:

  1. In a medium bowl, sift together the cake flour, baking powder, baking soda, salt, and cocoa powder. Set aside.

Combine Wet Ingredients:

  1. In a large bowl, whisk together the vegetable oil and sugar until well combined.
  2. Add the eggs, one at a time, beating well after each addition.
  3. Add the red food colouring, vanilla extract, and white vinegar. Mix until fully incorporated.

Combine Dry and Wet Mixtures:

  1. Alternately add the dry ingredients and the buttermilk to the wet mixture, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.

Bake:

  1. Divide the batter evenly between the prepared pans.
  2. Bake for 25-30 minutes, or until a toothpick inserted into the centre comes out clean.
  3. Allow the cakes to cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.

For the Cream Cheese Frosting:

Cream Ingredients:

  1. In a large bowl, beat the cream cheese and butter together until smooth and creamy.
  2. Gradually add the powdered sugar, one cup at a time, beating well after each addition until the frosting is smooth and fluffy.
  3. Beat in the vanilla extract until combined.

Assemble the Cake:

Layer and Frost:

  1. Place one cake layer on a serving plate or cake stand.
  2. Spread a layer of cream cheese frosting over the top.
  3. Place the second cake layer on top and spread the remaining frosting over the top and sides of the cake.

Decorate:

  1. Optionally, garnish with cake crumbs, sprinkles, or other decorations as desired.

Serve:

  1. Slice and serve the cake. Enjoy!
